Baked Caesar Zucchini - cooking recipe
Ingredients

1 medium zucchini
4 medium tomatoes
3 Tbsp. minced onion
1 tsp. oregano or Italian seasoning
1 tsp. basil
1/4 c. Caesar salad croutons
1/4 c. shredded sharp Provolone cheese
pinch of red pepper flakes
Preparation

Combine vegetables in an ovenproof baking dish: tomatoes (peeled and diced) and zucchini (diced or thinly sliced). Sprinkle with seasonings, cheese and seasoned salad croutons. Bake, uncovered, in 400\u00b0 oven for 35 minutes or more or until top is well browned.
Serves 8; 40 calories each serving.
