Cocktail Eggroll (Lumpia)(Philippine Recipe) - cooking recipe

Ingredients
    2 lb. beef or pork
    1 c. water chestnuts, chopped, or celery
    1 c. shelled shrimp, chopped
    1/2 c. carrots, shredded
    1/3 c. spring onion, finely cut
    1 1/2 tsp. salt
    1 tsp. ground black pepper
    1 fresh large egg
    25 to 30 pieces lumpia wrappers
Preparation
    Combine the first 7 ingredients in a bowl.
    Beat egg.
    Add to the first mixture and mix thoroughly.
    At one end of lumpia wrapper, spoon 2 tablespoons of the mixture and roll tightly. Seal one end of wrapper by brushing with water.
    Cut roll in 2 equal pieces and deep fry until golden brown.
    Serve with prepared sweet and sour sauce.
