Baked Fish - cooking recipe

Ingredients
    3/4 c. chopped onion
    2 cloves garlic, minced
    1 Tbsp. olive oil
    1 Tbsp. cornstarch
    1 (16 oz.) can tomatoes
    salt (optional)
    1/3 c. sliced stuffed olives
    1 tsp. chopped red or green chili pepper
    1 1/2 lb. flounder fillets or other mild fish
    1 Tbsp. fresh lemon juice
Preparation
    Preheat oven to 375\u00b0.
    In medium skillet, saute onion and garlic in olive oil until soft.
    Mix in cornstarch.
    Add tomatoes and their juice; mix until well blended.
    Cook over medium-high heat until sauce thickens.
    Stir in olives and chili pepper. Spoon half the sauce into a baking pan large enough to hold the fillets in one layer.
    Place fish over sauce; sprinkle with lemon juice (salt optional).
    Cover with remaining sauce; bake for 10 minutes, or until fillets flake easily.
    Serves 6.
