Cornmeal Muffins - cooking recipe

2 c. cornmeal
1 tsp. baking soda
1 tsp. salt
1 egg, beaten
1 1/2 c. buttermilk
Preparation

Combine first 3 ingredients in a medium bowl, mixing well. Combine egg and buttermilk, mixing well. Add to dry ingredients, stirring until batter is smooth.
Place a well-greased cast-iron muffin pan in a 500\u00b0 oven for 2 minutes or until very hot. Remove pan from oven; spoon batter into pan, filling 3/4 full.
Bake at 500\u00b0 for 9 to 10 minutes or until lightly browned.
Yields 16 muffins.
