Eggplant Casserole - cooking recipe
Ingredients

1 large or 2 small eggplants
2 eggs, well beaten
1 c. well drained tomatoes
1 small onion
2 c. corn bread crumbs
1 1/2 c. grated Cheddar cheese
butter or bacon drippings
milk
salt and pepper
Preparation

Cut peeled eggplant into 1-inch cubes and place in saucepan. Cover with water and cook until tender.
Drain thoroughly.
