Arroz Con Mariscos Y Lomo(Rice With Shellfish And Pork) - cooking recipe
Ingredients

2 lobster tails or 1/2 lb. large shrimp, shelled
1/4 lb. lean pork, diced
2 garlic cloves, peeled
3 or 4 Tbsp. olive oil
1 pimento, diced
1 medium onion, sliced
1 c. rice
1 tsp. salt or to taste
1/4 tsp. saffron
2 1/2 c. boiling water
1 (7 oz.) can minced clams and juice
1 Tbsp. minced parsley
Preparation

If lobster tails are used, cut into thirds, right through shell.
Cut pork into 1/2-inch cubes.
In heavy skillet, heat oil with garlic; when browned, discard.
Add pork to oil; cook until lightly browned.
Add pimento and onion; cook until onion is soft. Add lobster; cook until shell begins to turn red.
Add rice; stir to coat with oil.
