Crab Mornay - cooking recipe

Ingredients
    1 pkg. (10 oz.) frozen chopped spinach
    3 Tbsp. butter
    2 Tbsp. flour
    1 1/2 c. milk
    1/2 tsp. salt
    dash of cayenne
    approximately 1/2 c. light cream
    1 c. Swiss cheese, grated
    1 Tbsp. lemon juice
    2 cans (6 1/2 oz.) crab meat, drained and flaked with fork
    1/4 pkg. dry bread crumbs
    paprika to taste (optional)
Preparation
    Cook spinach according to package directions; drain.
    Place in 1 1/2-quart casserole dish; set aside.
    Preheat oven to 375\u00b0.
    Melt butter in medium saucepan and remove from heat.
    Blend in flour, salt and cayenne.
    Gradually stir in milk and cream.
    Bring to a boil, stirring constantly; boil 1 minute.
    Add cheese, stir until melted.
    Add lemon juice and crab meat.
    Pour over spinach. Sprinkle with bread crumbs and paprika.
    Bake 15 minutes or until crumbs are browned.
    Serve over toast.
    Serves 4 to 6 on buttered toast slices.
