Barb'S Parsley Potato Casserole - cooking recipe
Ingredients

2 pkg. (1 lb.) hash brown potatoes (frozen)
6 Tbsp. butter
3 Tbsp. flour
2 1/2 tsp. pepper
2 1/4 c. milk
2 Tbsp. minced parsley
1 Tbsp. minced onion
1 1/2 c. grated cheese
Preparation

Thaw potatoes.
Melt butter.
Add flour, salt and pepper. Stir until creamy.
Gradually add milk and stir until smooth and thickened.
Add parsley, onion and 3/4 cup cheese.
Break potatoes into cubes and stir into sauce.
Cook on top of stove 15 minutes at medium temperature (covered).
When tender, place in greased casserole bowl.
Sprinkle remaining cheese on top.
(Paprika can be added to top).
Cook in 450\u00b0 oven for 10 to 15 minutes.
Serves 6 to 8.
