Chicken And Rice Casserole - cooking recipe

Ingredients
    4 c. cold rice
    4 c. diced chicken
    3 diced boiled eggs
    2 c. diced celery
    6 tsp. diced onion
    1 tsp. salt
    1/2 c. blanched almonds
    2 cans cream of mushroom soup
    1 c. mayonnaise
    3 Tbsp. lemon juice
    3 Tbsp. chicken broth
    crushed potato chips
    grated Cheddar cheese (optional)
    mushrooms (optional)
Preparation
    Mix together the soup, mayonnaise, broth, lemon juice and salt. Add rice, chicken, onion, eggs, almonds, celery, cheese and mushrooms.
    Pour into a 13 x 9-inch pan.
    Sprinkle crushed potato chips over top.
    Bake at 375\u00b0, covered, for 45 to 55 minutes.
