Veal Villa D'Este - cooking recipe

Ingredients
    8 thin veal scallops, flattened
    flour
    salt and pepper to taste
    1/2 stick butter
    2 Tbsp. oil
    3 Tbsp. warmed Scotch
    3/4 c. heavy cream
    mushrooms (optional)
Preparation
    Dust veal lightly with flour.
    Saute veal in butter and oil for 2 to 3 minutes, until golden.
    Add the warmed Scotch whiskey, ignite and shake pan.
    Transfer meat to serving dish.
    Stir in 3/4 cups of heavy cream and cook until slightly thickened.
    Pour over veal.
    Serves 4. Can add sauteed mushrooms.
