Crab-Stuffed Sole - cooking recipe
Ingredients

3 Tbsp. butter
3 Tbsp. flour
1 1/2 c milk
1/3 c. sherry
1/2 tsp. salt
1 c. shredded Swiss cheese
2 lb. sole fillets
salt and pepper
1 medium onion, minced
2 Tbsp. butter
1 can (6 1/2 oz.) crab meat
5 fresh mushrooms, cleaned and chopped
1/2 c. cracker crumbs
parsley flakes
Preparation

In a 4-cup glass measure, heat butter 30 seconds.
Stir in flour, milk, sherry and salt, blending well.
Cook 2 to 3 minutes, stirring every minute until thickened.
Stir in cheese and set aside.
Cut fish in serving pieces and sprinkle with salt and pepper.
