Sweet Potato Pie - cooking recipe
Ingredients

1 unbaked pie shell
2 medium sized sweet potatoes
1/4 c. butter
1 c. sugar
1/2 c. milk
1 egg
1 tsp. vanilla
1/8 tsp. ground nutmeg
1/4 tsp. lemon juice
pinch of salt
Preparation
-
Boil
sweet
potatoes in skins until fork tender.
Peel and mash
with
butter until smooth and creamy.
Mix in sugar and milk;
add egg and beat briskly with fork to blend.
Stir in vanilla, nutmeg, lemon juice and salt; pour into pie shell. Bake in
hot
oven (400\u00b0) for 30 to 35 minutes until pastry is nicely browned
and
filling
seems
set
around edges.
Cool before cutting.
