Dutch Apple Rice Pudding - cooking recipe

Ingredients
    3 c. hot cooked rice
    2 c. applesauce
    3/4 c. firmly packed brown sugar
    6 Tbsp. margarine, melted
    1/4 c. raisins (optional)
    1 Tbsp. pure vanilla
    1 c. graham cracker crumbs
    1/2 c. shredded coconut
    apple slices for garnish
Preparation
    In medium bowl, combine rice, applesauce, 1/2 of sugar, 2 tablespoons
    of butter, raisins and vanilla; set aside.
    In another
    bowl, combine cracker crumbs and coconut with remaining sugar
    and 4 tablespoons butter; mix well.
    In a buttered 2-quart casserole,
    sprinkle
    3/4
    cup
    of the crumb mixture. Pour
    in all
    of
    the
    rice
    mixture; sprinkle with remaining crumbs.
    Bake in a preheated 350\u00b0 oven for 25 minutes or until top
    is
    golden. Serve
    warm
    with apple slices or ice cream. Makes 8 servings.
