Eggplant Casserole - cooking recipe

Ingredients
    1 eggplant, cooked
    1 c. milk
    2 eggs
    1 c. grated cheese
    1 Tbsp. margarine
    1/2 tsp. salt
    1/2 tsp. pepper
    8 saltine crackers
Preparation
    Cool cooked and drained eggplant.
    Mix together remaining ingredients.
    Add to eggplant.
    Bake at 350\u00b0 about 40 minutes.
