Zesty Salmon Loaf - cooking recipe

Ingredients
    1 c. chopped bell pepper
    3/4 c. chopped onion
    2 (14 3/4 oz.) cans salmon, drained and skin removed
    1 c. flake-type cereal, lightly crushed (such as corn flakes)
    1/2 c. old fashioned rolled oats
    2 large eggs
    1/4 c. ketchup
    3 to 4 Tbsp. lemon juice
    3 Tbsp. Dijon mustard
    3 Tbsp. prepared horseradish
Preparation
    Heat oven to 375\u00b0.
    Spray an 8 1/2 x 4 1/2 x 2 1/2-inch loaf pan with cooking spray.
    Spray a 10-inch nonstick skillet with cooking spray.
    Set over medium-low heat.
    Add pepper and onion. Cook about 6 minutes, stirring occasionally until vegetables are softened.
    Using slotted spoon, remove vegetables to bowl.
    Let cool slightly.
    To bowl add salmon, cereal, oats, eggs, ketchup, lemon juice, mustard and horseradish.
