Ingredients

2 sticks butter (no substitute)
1 lb. light brown sugar
2 1/4 c. quick cooking oatmeal
3 Tbsp. flour
1 tsp. salt
1 egg, slightly beaten
1 tsp. vanilla
Preparation

Melt butter in a 2-quart saucepan.
Add brown sugar, stirring well, with a large spoon.
Add remaining ingredients and stir well.
Drop by level teaspoon on a well-buttered nonstick cookie sheet.
Bake at 375\u00b0 for about 5 minutes.
Watch closely, they should be golden brown.
Let cool for 30 seconds and remove with spatula onto a rack to cool.
If cookies mash together, they are too warm.
If they stick and break, they are too cool and need to be reheated.
Can be stored in airtight container and frozen. Makes 10 dozen.
