Sugar Pickle For Ham - cooking recipe

Ingredients
    100 lb. ham
    18 lb. salt (half fine, half coarse)
    3 oz. saltpetre
    2 oz. saliratus
    3 lb. sugar or 1 qt. molasses
Preparation
    Boil the salt, saltpetre, saliratus and sugar or molasses. Skim.
    Let cool.
    Then pour it over the meat; the meat is to remain in pickle from 4 to 6 weeks.
