Potato Cheese Souffle - cooking recipe

Ingredients
    3 c. mashed potatoes
    3/4 c. hot milk
    1 1/8 tsp. salt
    1/4 tsp. freshly ground pepper
    1 1/2 Tbsp. butter
    1 1/2 Tbsp. finely chopped onion
    1 1/8 c. grated sharp Cheddar cheese
    3 eggs, separated
Preparation
    Preheat
    oven\tto
    350\u00b0.
    Mash
    potatoes
    again
    until smooth.
    Add milk, salt, pepper, butter and onion;\tbeat until fluffy.
    Stir
    in
    the
    cheese and add beaten egg yolks.
    Beat the egg
    whites
    until they stand in soft peaks and carefully fold into potato mixture.
    Turn into an ungreased 1 1/2 quart casserole and
    bake for 1 hour, until well-puffed and firm in center. Serve at once.
    Serves 9.
