Ingredients

1 c. whole wheat flour
1 c. unbleached all-purpose flour
1 Tbsp. sugar
1 Tbsp. baking powder
1 tsp. salt (optional)
2 eggs, separated
2 c. low-fat or skim milk
1/4 c. cooking oil
Preparation

Preheat waffle iron according to manufacturer's directions. Sift flours, sugar, baking powder and salt into a bowl.
Combine egg yolks, milk and oil.
Pour into flour mixture and beat just until smooth.
Beat egg whites until soft peaks form and fold into batter.
