Baked Roast - cooking recipe

Ingredients
    1 to 3 pieces celery, chopped
    1 onion, chopped
    1 bell pepper, chopped
    6 carrots, sliced
    2 potatoes, sliced
    salt and pepper to taste
    4 to 5 lb. roast
Preparation
    Brown roast on top of stove; save stock for gravy.
    Put roast in baking pan; add 2 to 3 cups water.
    Add vegetables; cover.
    Let cook 4 to 5 hours.
    Make gravy and add to meat and vegetables. Add more water if needed.
