Gene'S Quick Gumbo - cooking recipe

Ingredients
    1 pkg. Tony Chachere gumbo mix
    1 can Ro-Tel tomatoes
    4 chicken breasts
    salt and pepper
    4 to 5 Party Time sausages
    1 bell pepper
    3 celery stalks
    2 bunches green onions
    1 c. chopped okra
    2 cloves garlic
    extra roux (if desired)
Preparation
    Rinse chicken breasts thoroughly and cut into 1-inch pieces. Cut sausages in small slices.
    Cook in water for about 5 minutes and drain.
    In a large gumbo pan, dissolve mix in water.
    Saute vegetables in 2 tablespoons of oil; add to boiling water.
    Add chicken and sausages, Ro-Tel tomatoes, salt and pepper.
    Simmer for about 30 minutes.
    Serve with crackers or corn bread. Grandchildren will love this.
