Ingredients

3 lb. fresh beets
1 1/2 c. sugar
1/4 tsp. salt
vinegar to cover
Preparation

Cook beets (do not overcook).
Slice while warm.
Sprinkle with sugar.
Let stand until sugar is dissolved.
Stir and pour vinegar and salt over beets.
Let beets sit in refrigerator. Serves 8 or more.
Sliced onion is optional.
