Old Fashion Tapioca Pudding - cooking recipe

Ingredients
    2 c. milk
    1/4 c. pearl tapioca, soaked for 8 hours
    1/2 c. sugar
    3 eggs
    2 tsp. vanilla
Preparation
    Over medium heat in heavy saucepan, cook the milk and tapioca until tapioca is clear.
    Mix egg yolks and sugar in a medium bowl. Add milk mixture to egg mixture, a little at a time.
    Return to saucepan and cook until thick. Remove from heat. In another bowl (large), beat egg whites until stiff. Fold milk mixture into egg whites, a little at a time.
    Add vanilla.
    Refrigerate.
