Lime Salad - cooking recipe
Ingredients

1 package lime gelatin
1 - 1/2 cups boiling water
2 cups cottage cheese (sieved)
1 cup shredded unpeeled seedless cucumber
1 cup mayonnaise
Preparation

Dissolve gelatin in boiling water, cool. Stir in cottage cheese, cucumber and mayonnaise and chill until syrupy. Stir again and pour into a lightly oiled 1 -1/2 quart ring mold. Chill until firm. When ready to serve dip mold into lukewarm water for a few seconds, tap to loosen. Invert onto a serving platter. Place a bowl of Ruby Dressing in the center of the mold. Chill until ready to serve. If desired, garnish with halved cucumber slices or spiced apple rings. Fill center with leaf lettuce and serve dressing on the side.
