Spanish Chicken - cooking recipe

Ingredients
    1 (3 lb.) chicken, cut up
    1/4 tsp. pepper
    1/2 c. chopped onion
    2 cubes chicken bouillon
    1 c. tomato juice
    1 (10 oz.) pkg. frozen peas, broken apart
    1 tsp. salt
    3 Tbsp. shortening
    1 clove garlic, minced
    2 c. boiling water
    1 c. long grain rice
    1/4 c. chopped pimiento
Preparation
    Season chicken with salt and pepper.
    Brown in melted shortening.
    Add onion and garlic; cook until onion is just tender. Dissolve bouillon cubes in boiling water; add 1/2 cup broth to chicken along with the tomato juice.
    Cover; simmer 20 minutes.
