Carrot Zucchini Bread - cooking recipe

2 c. all-purpose flour
1 c. firmly packed light brown sugar
2 tsp. baking powder
1/8 tsp. ground cloves
1/8 tsp. ground nutmeg
1/4 tsp. ground cinnamon
1/8 tsp. salt
1/2 c. oil
2 eggs
2/3 c. finely shredded carrots
2/3 c. finely shredded zucchini
1 tsp. vanilla extract
Preparation

Preheat oven to 375 degrees. Grease a loaf pan (approximately 9x5x3 inches). Combine the flour, brown sugar, baking powder, cloves, nutmeg, cinnamon and salt in a bowl and stir to mix. In a large bowl, combine the oil and eggs. Beat to mix. Add the flour mixture and beat until smooth. Stir in the carrots and zucchini. Pour into the loaf pan.
Bake for 45 to 50 minutes or until a toothpick comes out clean when inserted into center of the loaf. Remove from the pan immediately.
