Zucchini Casserole - cooking recipe

Ingredients
    1/2 c. butter, melted
    1 (8 oz.) pkg. Pepperidge Farm stuffing mix
    4 medium zucchini, thinly sliced
    2 carrots, shredded
    1 medium onion, grated
    2 oz. pimentos (optional)
    1 (10 3/4 oz.) can cream of chicken soup
    1 c. sour cream
Preparation
    Preheat oven to 350\u00b0.
    Melt butter in frying pan; stir in all of the stuffing mix.
    Set aside 1/2 cup buttered stuffing mix. Combine remaining stuffing mix with all other ingredients. Smooth into buttered casserole; top with reserved 1/2 cup stuffing mix.
    Bake, uncovered, for 25 minutes, or until browned.
    Can be assembled ahead.
    Serves 6 to 8.
