Escarole With Garlic(Esscarola Con Aglio) - cooking recipe

Ingredients
    2 heads escarole
    1/3 c. olive oil
    4 cloves chopped garlic
    1/4 tsp. salt
    1/4 tsp. red pepper
    1/2 tsp. parsley
Preparation
    Wash
    escarole
    thoroughly
    in
    several changes of cold water. Discard
    any
    bruised
    or tough leaves and drain well. Heat oil in
    large skillet and add garlic.
    Saute for 1 minute on medium heat.
    Do
    not
    brown garlic.
    Add cleaned escarole and the rest of
    the ingredients.
    Saute on medium heat for 8 to 10 minutes. Serve immediately.
    Makes 4 to 6 servings.
