Confetti Omelette - cooking recipe

Ingredients
    6 slices bacon or large piece of ham
    1/3 c. chopped onion
    1 (6 oz.) can mushrooms
    8 eggs, beaten
    1 c. milk
    2 Tbsp. pimento
    1 Tbsp. parsley
    1/2 tsp. salt
    1 c. sharp cheese plus 1 c. Swiss
    1 Tbsp. flour
Preparation
    Fry bacon and crumble.
    Cook onion until tender and add mushrooms.
    Combine rest of ingredients, except cheese.
    Toss cheese with flour.
    Then add to egg mixture.
    Pour into 1 1/2-quart casserole.
    Bake 40 minutes.
    Serves 6.
