Tabooley(Wheat Garden Salad) - cooking recipe

Ingredients
    1 c. fine cracked wheat, washed and soaked in water (doubles in bulk, so you large bowl to soak)
    1 bunch green onions, chopped small
    1 bunch fresh mint, chopped fine
    1 bunch parsley, chopped
    3 tender cucumbers, sliced in small cubes
    3 or 4 solid tomatoes, cut in small pieces with sharp knife
    juice of 2 lemons and about 2 Tbsp. fine chopped rind
    about 1/2 c. olive oil
    salt and pepper to taste
Preparation
    Combine vegetables in large bowl.
    Squeeze wheat dry and add to vegetables.
    Add lemon juice and rind (optional).
    Add olive oil.
    Add salt and pepper (I like fresh ground) as for any salad. Toss lightly with 2 large spoons.
