Corn Relish - cooking recipe
Ingredients

1 c. vinegar
1/2 c. sugar
1 1/2 tsp. mustard seed
1/2 tsp. salt
3 1/2 c. cooked fresh corn, cut from the cob
1/2 c. chopped green pepper
1/2 c. diced pimiento
1/4 c. chopped celery
1/4 c. chopped onion
1 small clove garlic, minced
Preparation

Combine
vinegar,
sugar,
mustard
seed
and salt in a Dutch oven;
boil
2 minutes, stirring to dissolve sugar.
Add remaining ingredients
to
sugar mixture, and boil 3 minutes. Cool.\tStore in refrigerator in an airtight container.
Yields 3 1/2 to 4 cups.
