Ingredients

1 1/4 c. flour
1 c. sugar
1 1/2 tsp. cinnamon
3/4 c. cooking oil
2 eggs
3 Tbsp. honey
whipped cream or dessert topping
2 tsp. vanilla
1 c. finely grated carrot or 1 (4 1/2 oz.) jar strained carrot baby food
1 c. pecans or toasted slivered almonds
Preparation

In large mixing bowl, combine flour, sugar, cinnamon, oil, eggs and vanilla.
Beat until smooth.
Stir in carrots and 3/4 cup nuts.
Pour batter into greased 9-inch square pan.
Bake at 300\u00b0 for 40 to 45 minutes.
Cool; cut into squares.
