Chilled Raspberry Parfaits - cooking recipe

Ingredients
    2 c. fresh or frozen raspberries, thawed
    1/2 c. peach or apricot nectar
    1 envelope unflavored gelatin
    1 tsp. lemon juice
    4 packets Equal
    15 oz. can evaporated milk, chilled icy cold
    1 c. fresh or frozen raspberries (optional)
Preparation
    In a blender, combine 2 cups berries and nectar.
    Cover and process smooth.
    Sieve to remove seeds.
    Combine about 1/3 cup puree in saucepan with gelatin; let stand 5 minutes, then heat and stir until gelatin is dissolved.
    Remove from heat; stir in lemon juice, Equal and remaining puree.
    Place in a large mixer bowl. In chilled small mixing bowl, beat evaporated milk until soft peaks form and mixture triples in volume.
    Gradually fold in gelatin mixture.
    Gently fold mixture into the 1 cup whole berries.
    Turn into parfait glasses over a layer of raspberries. Makes 6 servings.
    Cover and chill 4 to 8 hours.
