Carrot Cake - cooking recipe
Ingredients

1 1/2 c. vegetable oil
2 c. sugar
4 eggs
2 c. flour
2 tsp. baking powder
2 tsp. soda
1 tsp. salt
2 tsp. cinnamon
3 c. shredded carrots
1 c. chopped nutmeats
1 c. diced dates or raisins
Preparation

Beat eggs thoroughly.
Add sugar.
Beat well.
Add oil and continue beating.
Add vanilla.
Sift together the flour, baking powder, soda, cinnamon and salt.
Add to egg mixture when thoroughly blended.
With a spatula or spoon, stir in the carrots, nutmeats and dates.
Bake at 350\u00b0 for 45 to 60 minutes in a 9 x 13-inch cake pan.
Can also bake in a 16 x 10 1/2-inch pan.
Frost cake when cool.
