Applescotch Crisp - cooking recipe

3 lb. Georgia apples, peeled, cored and sliced
1/2 c. margarine
3/4 c. brown sugar
1 tsp. cinnamon
2 c. all-purpose flour
2 c. sugar
1 tsp. salt
2 tsp. baking powder
1 c. vegetable oil
2 eggs
3/4 c. flaked coconut
1 c. chopped pecans
1/2 c. butterscotch chips
Preparation

Coat a 9 x 13-inch pan with vegetable cooking spray.
Spread apples in bottom of pan; dot with margarine.
Combine brown sugar and cinnamon, and sprinkle over apples.
Sift together flour, sugar, salt and baking powder in large bowl.
Add oil and eggs, mixing by hand until smooth (batter will be thick).
