Potato Pancakes - cooking recipe

Ingredients
    2 Tbsp. flour or 3 Tbsp. if needed
    1 1/2 tsp. salt
    1/4 tsp. baking powder
    1/8 tsp. pepper
    3 c. grated potatoes
    2 eggs, well beaten
    1 Tbsp. grated onion
    1 Tbsp. parsley flakes
    oil (1/4-inch deep in frying pan)
Preparation
    Combine flour, salt, baking powder, pepper, flour, eggs, onion and parsley. Add potatoes to mixture
    and beat throughly with a spoon.
    Cook over medium heat until golden brown and crisp on one side.
    Turn carefully and brown on other side.
    Serve with applesauce.
