Chicken, Rice And Peas Au Gratin - cooking recipe

Ingredients
    4 Tbsp. butter or margarine, divided
    3 Tbsp. flour
    1 tsp. tarragon or other herb, crumbled
    1 c. chicken broth
    1 c. milk
    2 c. diced or julienne cooked chicken or turkey
    1/4 tsp. salt
    1/8 tsp. pepper or to taste
    2 c. cooked rice
    1 c. frozen peas
    2 Tbsp. grated Parmesan cheese
    1 Tbsp. fine dry bread crumbs
Preparation
    Melt 3 tablespoons butter in saucepan over medium heat.
    Blend in flour and tarragon and cook 1 minute without browning. Gradually stir in broth and milk until thickened and smooth.
    Fold in chicken and add salt and pepper; set aside.
    Spread rice in greased 6-cup shallow baking dish; sprinkle with peas and pour on creamed chicken.
    Dot with remaining 1 tablespoon butter, then sprinkle with Parmesan and bread crumbs.
    Bake in preheated 400\u00b0 oven until bubbly, about 20 minutes.
    Makes 4 servings.
