Stuffed Potatoes - cooking recipe
Ingredients

10-12 baking potatoes
1-1/2 cup chopped onions
1-1/2 cup chopped celery
1 bunch chopped shallots
1 block butter
1 lb. peeled shrimp tails (chop if shrimp are large)
1 lb. crabmeat (optional)
1 lb. Mexican Velveeta
Evaporated milk (enough to get desired consistency)
Salt, pepper, Tony's, and hot sauce to taste
About 2 cups grated Cheddar cheese (for topping)
Preparation

Wash potatoes and wrap in foil and bake until very tender. While potatoes are baking, saute seasonings in butter.
Add seasoned shrimp
(and crabmeat) and cook about 10 minutes longer. Add cheese and melt.
Scoop out potatoes while they are hot and mash thoroughly.
Add shrimp mixture and mix well.
Add milk to get the desired consistency.
Season to taste.
Stuff potato mixture back into shells and top with grated cheese.
Bake before serving
at 350 degrees until hot.
These may be frozen before baking.
