Seafood Eggplant Casserole - cooking recipe

Ingredients
    5 eggplant
    2 small green peppers
    1 lb. chopped raw shrimp
    3 c. seasoned bread crumbs
    2 eggs
    2 onions
    1 lb. crabmeat
    1 stick butter
    salt and pepper to taste
    grated cheese (optional)
Preparation
    Cook, drain and mash eggplant.
    In skillet, saute onions, green peppers and butter until vegetables are soft.
    Add shrimp, crabmeat, bread crumbs and eggs (slightly beaten) into buttered casserole.
    Top with more bread crumbs and grated cheese.
    Bake at 250\u00b0 for one hour.
    Serves 10.
