Italian Chicken - cooking recipe

Ingredients
    4 skinned and boned chicken breast halves
    1 large onion, sliced
    1 large bell pepper, sliced
    1 Tbsp. dried Italian seasoning
    2 Tbsp. vegetable oil
    2 large tomatoes, peeled and sliced
    1/2 tsp. salt
    1/4 tsp. pepper
    hot cooked rice
Preparation
    Cook the first 5 ingredients in a large skillet over medium heat, stirring constantly, for 5 minutes.
    Add tomatoes, salt and pepper.
    Cover, reduce heat and simmer 5 minutes.
    Serve over rice.
    Yields 4 servings.
