Healthy Omelet - cooking recipe
Ingredients

equivalent of 2 eggs without the fat and cholesterol (for example, Egg Beaters)
1 Tbsp. skim milk
1/2 c. one or any combination of the following: broccoli flowerets, cauliflower flowerets, sliced carrots, sliced mushrooms, chopped green bell pepper and chopped onion
Preparation

Mix egg substitute and milk in bowl.
Set aside.
Spray skillet with nonstick cooking spray.
Place on burner and heat.
Pour mixture in hot skillet.
Scatter vegetables on one-half side of mixture.
Fold plain half side of mixture onto vegetables.
Flip omelet several times until light brown.
Enjoy without any guilt.
