Chicken Stir-Fry - cooking recipe

Ingredients
    2 whole chicken breasts, skinned, boned and cut into 1-inch cubes
    1 Tbsp. cornstarch
    1 Tbsp. cooking sherry
    1 Tbsp. soy sauce
    2 Tbsp. peanut oil
    1/2 lb. fresh, sliced mushrooms
    1 green pepper, cut into 1-inch pieces
    1 Tbsp. hoisin sauce
    salt to taste
    1/2 c. unsalted raw cashews
Preparation
    Sprinkle chicken with cornstarch; toss to coat well.
    Add sherry and soy sauce; marinate 15 minutes at room temperature. Heat oil in uncovered wok to medium-high (375\u00b0).
    Add chicken; stir-fry for 4 minutes.
    Add mushrooms and green peppers; stir-fry 1 minute.
    Add remaining ingredients; toss to mix.
    Serve immediately over fluffy white rice.
    Serves 4.
