Orange And Raisin Bread Pudding - cooking recipe

Ingredients
    3 large eggs
    1/3 c. sugar
    2 c. milk
    1/2 c. orange juice
    1 Tbsp. orange rind
    1 tsp. vanilla
    1 tsp. cinnamon
    1/2 tsp. freshly grated nutmeg
    1/2 tsp. lemon rind
    12 slices firm textured white bread, lightly toasted with crusts removed and divided
    3 oranges, peels, pith and membranes removed, cut into small pieces (2 c.) and divided
    1/2 c. raisins, divided
    3 Tbsp. orange marmalade
    sifted confectioners sugar
Preparation
    In large bowl, beat eggs with electric mixer until combined. Add sugar, a little at a time; beat mixture until it ribbons when beater is lifted (8 to 10 minutes).
    Add next 7 ingredients; beat until combined.
    Line buttered 8-inch square baking dish with four slices of bread.
    Top bread with half the orange pieces and half the raisins.
    Spoon 1/3 of the custard over mixture.
    Add another layer of bread; top with remaining pieces and raisins.
    Spoon half of remaining custard over mixture.
    Top with remaining bread slices; spoon rest of custard over bread, carefully pressing down on top layer so that it is covered with custard.
    Cover pudding with plastic wrap.
    Chill 1 to 3 hours or overnight.
    Serves 8.
