Eggplant Casserole - cooking recipe
Ingredients

1 medium eggplant, peeled and cubed
1 lb. ground beef
2 c. cooked rice
9 1/2 slices bread, made in crumbs plus 1 tsp. butter
pepper and salt to taste
1 chopped onion
1 egg, beaten
Preparation

Cook eggplant in a little salty water; drain and mash.
Cook hamburger and onion until done.
Mash meat to keep it from lumping, them drain and add pepper.
Crumble rice in eggplant, then add beaten egg.
Mix well.
Pour in dish and top with buttered crumbs.
Bake at 350\u00b0 until brown.
