Apricot Coconut Balls - cooking recipe

Ingredients
    3/4 c. dried apricots (add a little sugar to taste)
    1 (3 oz.) cream cheese, softened
    1/8 tsp. almond extract
    1 c. flaked coconut
Preparation
    Cook apricots in boiling water to cover just until tender (about 35 minutes).
    Drain and dice.
    Mix apricots, cheese and extract together. Mix in 1/2 cup coconut.
    Shape into small balls and roll in remaining crust.
    Chill. Makes 24 balls.
