Zucchini Bread - cooking recipe

Ingredients
    2 c. sugar
    1 c. vegetable oil
    3 eggs
    1 tsp. vanilla extract
    3 c. all-purpose flour
    1 tsp. salt
    1 tsp. baking soda
    1 tsp. cinnamon
    2 c. shredded unpeeled zucchini
    1 c. chopped nuts
Preparation
    Beat sugar, oil, eggs and vanilla extract in a mixing bowl until fluffy.
    Mix flour, salt, baking soda and cinnamon.
    Add to egg mixture and stir until blended.
    Stir in zucchini and nuts. Put into a greased 9 x 5 x 3-inch loaf pan.
    Bake at 350\u00b0 for 1 hour and 20 minutes or until done.
    Cool before serving.
