Sausage And Cajun Rice Casserole - cooking recipe

Ingredients
    2 lb. sausage
    1 c. uncooked rice
    1 bell pepper
    1 medium onion, chopped
    2 c. water
    salt and pepper
    2 lb. smoked sausage, cut into 3/4-inch slices
    1 large onion, cut into eighths
    1 medium cabbage, cut into small chunks
    1/2 c. water
    1 lb. carrots, cut into 1/2-inch slices
    5 medium potatoes, peeled and cut into 3/4-inch cubes
Preparation
    Brown sausage in a Dutch oven; remove and drain on paper towels.
    Drain off drippings, reserving 1 tablespoon in Dutch oven.
    Saute onion in reserved drippings, 3 to 5 minutes; add sausage, cabbage and water.
    Cover and cook over low heat 10 minutes.
    Stir in carrots and potatoes; cover and cook an additional 20 minutes or until they are tender.
    Serves 8.
