Creamed Chicken(50 Generous Servings) - cooking recipe

Ingredients
    20 lb. chicken (breasts and thighs)
    2 medium onions, finely chopped
    2 c. celery cut in chopper
    3 green peppers, hand diced
    3 carrots, grated
    2 qt. scalded milk
    1 1/2 to 2 c. cornstarch in cold water
    salt and pepper
    1 small jar pimiento, chopped
Preparation
    Steam chicken, take off bones.
    Saute onions, celery, peppers and carrots in small amount of oil.
    Mix scalded milk with 2 to 3 quarts chicken broth.
    Add cornstarch and water to liquids, stirring constantly.
    Season with salt and pepper.
    When thickened, add sauteed vegetables and chicken pieces.
    Add pimiento.
    Taste (chicken bouillon granules can be added if needed for flavor).
