Refrigerator Watermelon Rind Pickles - cooking recipe

Ingredients
    4 c. cubed, peeled watermelon rind (red removed)
    3/4 c. white sugar
    1 c. vinegar
    2 stick cinnamon
    1 tsp. whole cloves
Preparation
    In medium saucepan, stir together all ingredients.
    Bring to a boil over high heat, stirring often.
    Reduce heat.
    Cover.
    Simmer slowly for 45 to 50 minutes, or until rind is tender and translucent.
    Cool.
    Refrigerate rind with liquid in covered glass container.
    Store for at least 12 hours before serving to blend flavors.
    Pickles will keep up to 2 weeks.
