Shannon'S Blueberry Muffins(Fat-Free) - cooking recipe
Ingredients

2 c. cake flour
2 1/4 t. baking powder
1 c. sugar
1/2 t. salt
1/4 c. Egg Beaters
1 t. unsweetened applesauce
Skim milk
1 c. frozen blueberries
Preparation

Preheat oven to 350\u00b0. Combine dry ingredients in a large mixing bowl. In a separate bowl, combine wet ingredients; stir wet ingredients into dry ingredients. Add in just enough milk to make a cake-like batter. Mix in blueberries. Pour batter into greased large muffin tins.
Bake at 350\u00b0 for 25 to 30 minutes, until toothpick inserted in center of muffin comes out clean.
